This recipe is one my 98 year old grandmother showed me when I was staying with her. She is not doing quite as well now, but her mind is still sharp as a tack. I will never forget being in her kitchen that afternoon learning once again from a women who has taught me so much. The poke salad came from my uncle's pasture. As with all greens, they cook down so more is needed than you might think.

Reuben lovers just go nuts over this spread and you will be hard pressed to have any leftovers on hand. Serve with plain or toasted rye bread slices, crackers, or other sturdy sides. Local delis sell this for as much as $12.99 per pound! If you make it at home it tastes better and is much cheaper.

Easy 2 ingredient stroganoff that tastes better than with hamburger!! My family loves it and is so very easy to make. Both items are store bought products and requires no cutting or browning either!

This creamy coffee and hot chocolate mixture is simply delightful. Try adding a dash of Kahlua or other coffee flavored liquer for some added flavor and warmth of a different kind. Regular or skim milk can be used with excellent results and vanilla or chocolate ice cream also is fantastic on top in place of the whipped cream.

This quick and easy frozen dish makes for a great side dish or dessert. Pineapple chunks or shapes can be usd in place of the crushed pineapple, and pecans or almonds would be good in place of the walnuts. This recipe is from a "country style" recipe collection I picked up at auction that spans several generations and over six decades of great cooking.
