This quick and easy frozen dish makes for a great side dish or dessert. Pineapple chunks or shapes can be usd in place of the crushed pineapple, and pecans or almonds would be good in place of the walnuts. This recipe is from a "country style" recipe collection I picked up at auction that spans several generations and over six decades of great cooking.

While this combination of ingredients might sound odd, the combination is actually divine. The simple dressing really makes the ingredients shine and the salad is easy to make and is best made in advance - a hostess or host's dream dish! If you do not have any oil and vinegar dressing on hand, use a simple combination of 2 parts oil to 2 parts vinegar, salt, pepper, and a pinch of dried mixed herbs.

I love German potato salad. It is one of those homey old fashioned dishes that just screams comfort food to me, and the blend of flavors is one of my favorites. This baked version is especially delicious and is easy to keep warm for potlucks and other occasions.
