This cool salad is one of our absolute favorite summer salads. We have it at least once a week - or sometimes even more frequently during the hotter parts of the summer. Frequently it becomes our entire dinner when it is just too hot to even think about other food. I like adding some fresh dill occasionally in place of the chives and even occasionally fresh mint for a different taste. You can skip the draining step if desired - but the dressing will be much thinner and the salad will not store as well.
1 large English (seedless or burpless) cucumber
Kosher salt
1/2 cup sour cream
2 tablespoons seasoned rice vinegar
Pinch cayenne pepper
Freshly ground black pepper
3 tablespoons minced fresh chives
Peel the cucumber and slice into 1/4 inch thick rounds. If desired, cut the rounds into halves or quarters. Place the cucumber slices in a colander over a bowl and sprinkle liberally with the salt. Toss to coat with the salt. Cover with plastic wrap and refrigerate for at least an hour and up to 12 hours. Rinse the cucumbers with very cold water. Press the extra water out gently with a large spoon. In a small bowl mix together the rest of the ingredients until smooth. Mix with the cucumbers in a serving bowl and then taste to see if you need to add more salt. Serve immediately, or refrigerate for up to 24 hours.
Makes 4 side dish servings or 2 main dish servings.

Made this for the Fourth of July using regular garden cucumbers and it was great on a really hot day! I made a whole ton of it and still ran out. Salting and draining the cucumbers really helped it not be watery like other cucumber salads.

I keep getting asked how much per serving specific dishes are. I have no idea about what things cost in different areas - but I can share what the cost per serving works out for me as I test or create these recipes. This is most definitely a "your mileage may vary" situation - what is cheap for me may not be cheap for you.
This dish cost per serving and here is the breakdown:
Cucumbers and chives from garden (free)
$0.05 for the salt, pepper, and cayenne (overestimated for rounding)
$0.13 for the rice vinegar ($2.00 per 16 ounce bottle - 2 tablespoons in an ounce)
$0.18 for the sour cream (pint on sale for $0.69)
Total for dish is $0.36 or $0.18 per serving as a main dish or $0.09 as a side dish.
If I had to buy the cucumber the price would increase by a dollar total and $0.68 per serving for a main dish or $0.34 as a side dish. I would never buy chives as I have tons in the garden and in the freezer.
If you have the costs on hand or make this dish (or any other dish on the site) please feel free to share your estimate of the cost so everyone can get a better idea of the cost of a dish before they try making it.
