This salad is truly colored with all the hues of the sunset and makes a beautiful and easy side dish.
3 cups raw cabbage, finely shredded
1 canned beet, finely shredded
1 raw carrot, finely shredded
1 tablespoon sugar
1 teaspoon salt
4 tablespoons vinegar or lemon juice
1/2 teaspoon lemon juice
1 teaspoon celery seed
Mix vegetables. Add dressing made of vinegar and seasonings just before serving. Mayonnaise may be served with it.
