A delightful twist on traditional coleslaw or other summer salad recipes, this piquant salad is easy to make and great for picnics or potlucks. Make it a day ahead for the best flavor.
1 large shredded head of green cabbage
1 minced red bell pepper
1 minced green bell pepper
1 1/3 cups sugar
1 cup apple cider vinegar
3/4 cup water
3/4 tsp. salt
1/2 tsp. black pepper
Toss the cabbage and peppers together. Mix the remaining ingredients in a small bowl and pour over the cabbage. Toss again. Refrigerate before serving.
