Recipes for gelatin salads abound in my collection of heirloom recipes. Conservatively I have over 1,000 of them - and many of them will someday grace these pages. This one is one of the first because it was very different than most and even the legion of gelatin salad haters in my family liked it enough to grab seconds.
6 ounces flavored gelatin (any flavor)
16 ounces small curd cottage cheese
16 ounces thawed frozen whipped topping
1 large can drained crushed pineapple
2 cans drained mandarin oranges
1/2 cup chopped nuts
Mix the powdered gelatin into the cottage cheese. Mix well to combine. Fold in the whipped topping and the pineapple and oranges. Refrigerate for at least 3 hours. Sprinkle with the nuts before serving.
