This recipe for an old fashioned dressing suitable for salad, sandwiches, or other dishes is just fantastic. From a collection of recipes circa 1945, it is easy to make and stores well. A great addition that I cannot resist is a dash or two of cayenne pepper for a more balanced flavor. Celery seed or salt also makes a nice addition.
3 tablespoons sugar
1 teaspoon salt
1/2 teaspoon dry mustard
1 1/2 tablespoons flour
1 egg beaten
3/4 cup milk
4 tablespoons vinegar
1 tablespoons butter
Whisk together the ingredients in the order listed (except for the butter) in the top of a double boiler over barely simmering water until very thick. Add the butter and whisk until it melts and the dressing is smooth. Remove from the heat, cool and use as desired.
