This salad is very unique and astonishingly good. Well, I guess it is perhaps more correct to say that I was astonished that it was good! A great salad to serve as suggested on the recipe card - "Serve in lettuce cups with a watercress garnish." or when used for sandwich filling. This recipe comes from a collection of recipes circa 1955.
3 cups cooked diced chicken
2/3 cup chopped sweet pickles
1/2 cup chopped water chestnuts
1/3 cup halved seedless grapes
1/3 cup mayonnaise
1 1/2 teaspoons vinegar
1/2 teaspoon salt
Mix together the chicken, pickles, chestnuts, and grapes. Mix together the mayo, vinegar, and salt in a small bowl. Pour over the salad and toss. Chill well.
