Main Dish Recipes and Ideas A savory meatloaf with lots of veggies and a really good flavor.

1-1/2 pounds lean ground beef
5 ounces fresh spinach, finely chopped
2 carrots, peeled and grated
1 diced red bell pepper
1/4 cup onion, finely chopped
1 egg, beaten
3/4 cup vegetable or tomato juice (divided)
1 tablespoon Worcestershire sauce
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup ketchup

Preheat oven to 350 degrees. In a small bowl, combine 1/4 cup of the tomato juice and the ketchup. Set aside. Combine all other ingredients and mix well. Form into a loaf and place in a loaf pan. Bake for 50-55 minutes. Top with reserved ketchup mixture during last 5 minutes of cooking.

Artichokes ... are just plain annoying ... After all the trouble you go to, you get about as much actual 'food' out of eating an artichoke as you would from licking thirty or forty postage stamps. Have the shrimp cocktail instead.
