Simple, easy, and old fashioned, this cranberry relish has a great flavor and texture. This recipe is from a "country style" recipe collection I picked up at auction that spans several generations and over six decades of great cooking.
1 orange
1 pound cranberries
2 cups sugar
Pinch salt
1 cup chopped walnuts or pecans
Peel the orange and dice the flesh. Grate half of the peel and combine with the orange flesh and the rest of the ingredients except for the nuts in a casserole. Cover and bake at 325 degrees for 1 hour and 15 minutes. Remove from the oven and cool. Add nuts and chill overnight.
