|
A bit different from the classic "smash-with-a-fork" peanut butter cookies, these cookies are soft and delicious - and faster to make. This recipe comes from a collection from the 1980's.
1/2 cup softened butter
1/2 cup peanut butter
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cup flour
Cream together the butter, peanut butter, sugars, egg, and vanilla. Add flour, soda and salt and mix until smooth. Chill dough for 15-45 minutes. Roll into balls and place on greased cookie sheet 1 inch apart. Bake at 350 degrees for 7-9 minutes or until golden brown. Do not burn.
