I am a Caesar salad addict and always choose the option of a Caesar over another salad when eating out. But boy does that get pricy! My husband is not a Caesar dressing fan and bottled dressings just are not the same - not to mention they also get very expensive. This recipe makes the perfect amount of dressing for one large salad - but can be multiplied as many times as you need for larger salads.
1 anchovy fillet
1 garlic clove (can use less garlic by using chopped or minced garlic from a jar to taste)
Coarse kosher salt
Freshly ground black pepper
Pinch dry mustard
2 teaspoons mayonnaise
Dash Worcestershire sauce
Squeeze lemon juice (to taste)
2 tablespoons extra virgin olive oil
Mash the anchovy fillet, garlic, salt, and pepper in a small bowl until smooth. Mix in the mustard, mayonnaise, Worcestershire, and lemon juice until smooth. Beat in the olive oil until a smooth dressing forms. Use on your favorite greens and add chicken, croutons, shrimp, shredded Parmesan cheese, or other favorite ingredients.
Makes One Serving.
